I love pie.
Seriously. I love pie. I think it may be my favourite form of dessert. If only making a pie crust was simple work…but wait…there’s a solution! Whole Foods to the rescue! The freezer section has Wholly Wholesome Organic Pie Shells in three flavours – original, whole wheat and spelt. I picked up the whole wheat crust on Monday to try and experiment with a peach pie.
I confess that I felt a bit invincible as I started to pull together the ingredients for the pie – who needs a recipe when the crust is already pre-made? I shouldn’t have been so cocky about it (although the finished product did taste good).
Ingredients
- 8 peaches cut into long slices
- 1/4 cup sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 2 tbsp tapioca starch (I would increase this to at least 4tbsp)
When I started layering the peaches into the pie, it filled up pretty quick, but in retrospect, I should have overfilled it with peaches (mistake #1). The second issue was the consistency of the filling after it baked – I should have added more tapioca starch. Other than that, it tasted great with a scoop of ice cream – this addition made the dessert not vegan, but the pie itself was. I actually enjoyed the minimal sugar in the pie filling because it brought out the tartness of the peaches.
I need to attempt this pie again – but this time, perhaps it will be a strawberry pie to celebrate Canada Day!
