I almost feel silly even calling this a recipe, but it tasted oh so good. I have a lot of peaches in the refrigerator from my market trip this weekend, and wanted to put them to use.
I cut the peaches in half and grilled them face down on the grill. Cutting the peaches was a bit tricky – I cut the peach in half and then twisted the two halves in the opposite direction to remove the pit. One side released fairly easily, and I used a paring knife to remove the pit from the other. I’d also recommend scoring the peach in a few places before cooking – it will make it easier to eat since the skin doesn’t get quite cooked.
Once the peaches had some nice grill marks, I sprinkled them with some cinnamon and served them with a scoop (or two!) of ice cream. So fresh tasting, and if I hadn’t been so generous with the ice cream, it would have been a fairly low-cal dessert.
