I love it when my garden prospers with little intervention on my part. My oregano plant from last spring survived the winter and is absolutely beautiful right now. Last year, I borrowed a friend’s dehydrator and dried up enough oregano to get through the winter, but I’m happy to have it freshly available again.
Vegetarian Times just had an article in their March issue about oregano. Did you know that oregano provides up to 20 times more antioxidants than other common herbs? But even more exciting was the Black Olive Tapenade recipe that I need to try out…that will definitely be in a future post – perhaps when I’m eating feta again.
